Details
One of the great appellation controlled cheeses, and widely heralded as the King of French cheeses. Ripened in caves, Roquefort's (roke-FORE) marbled blue veins are induced by "fleurines", currents of air let into the cave to assist the mould development process. This mould carries is own fame and is now recognized as "Penicillium roqueforti". All rindless wheels are foil-wrapped and stand 100mm high and 200mm in diameter. Roquefort has one of the most complex and robust blue flavours that sets it apart from all other blues. Soft yet crumbly, with a spicy, sea-salty flavour. The greenish- blue veining characteristics make Roquefort easily recognizable. How should I use this cheese? Roquefort deserves to be shown off as a dessert cheese paired with a sweet dessert wine or served crumbled with a side salad.
