Whats your Opinion on Australian Pasteurising Laws?

Recently the Australian government allowed imported unpasteurised Roquefort cheese into the country however Australian cheese makers are still not allowed by law, to do the same. Our family have travelled around the world working with over 16 different European cheese makers who make amazing flavoured cheese however their health standards were VERY questionable in comparison to what Australian cheesemaker’s have to operate by. What's your opinion?

Raw Milk is allowed in the States

Hi! In the U.S., we allow the production of raw milk cheeses as long as the aging process is 60 days or longer (since studies here show that bacteria are pretty much dead by then). This obviously precludes the use of raw milk for fresh and soft cheeses, which can't be aged that long, but it allows small producers to use raw milk for end product quality reasons.

The biggest bug affecting us here is listeria, and pasteurization doesn't remove that, anyway!

So. . . I think you're right. Either decide that no unpasteurized cheese will be allowed in Australia AT ALL, or require the same standards of everybody.

The science is either there or it isn't

It seems totally hypocritical. I mean, if the science backs up health risks of unpasteurised milk cheese (I'd like to see it), then have a rule that applies to everyone. If there is no good science to back it up, then why have a rule in the first place?

Pasteurising

I believe Will Studd (ex-owener of Richmond-hill larder)is doing a great job in tyring to lift the ban on raw milk cheese. Im not sure if he would be a good person to contact to maybe update you on any progress. Maybe you guys could work together and come up with a solution?

Good Luck!
