One of the great appellation controlled cheeses, and widely heralded as the King of French cheeses. Ripened in caves, Roquefort's (roke-FORE) marbled blue veins are induced by "fleurines", currents of air let into the cave to assist the mould development process. This mould carries is own fame and is now recognized as "Penicillium roqueforti". All rindless wheels are foil-wrapped and stand 100mm high and 200mm in diameter. Roquefort has one of the most complex and robust blue flavours that sets it apart from all other blues. Soft yet crumbly, with a spicy, sea-salty flavour. The greenish- blue veining characteristics make Roquefort easily recognizable.

How should I use this cheese?

Roquefort deserves to be shown off as a dessert cheese paired with a sweet dessert wine or served crumbled with a side salad.

I normally cannot eat Blue cheeses at all but i could not get enough of this one!!! I highly recommend this cheese.

visited Hobart, tried this cheese at the markets bought some back to Bris with us, and wow oh wow! What a treat, friends stayed over night bought it out with wine for desert, and should of kept it just for us as it was devine, best blue out there, good job every one...trish

Blue By Ewe - clever 'girls' !

This is delicious - pleasantly salty, but light and throughly enjoyable if used in moderate quantities. I'm a real blue cheese fan, but hubby doesn't usually go for 'stinky' cheeses. So, it was a pleasure to see him happily working his way through this on light crackers. We saved about half which we plan to crumble through a fresh salad tomorrow. Can't wait!

Amazing blue. First tried it at the Taste of Tasmania and I just couldnt stop eating it. Definitely a must try.

The Blue!!

I visited the cellar door just after Christmas and tried their newly released blue which just melted in my mouth. This is the closest Australian blue to the real thing (Roquefort) i have ever tried! I would recomend anyone to try it.
